Salmon Loaf With Celery And Parsley

Ingredients

  • 1 can salmon (15.5 oz)
  • 2 cups soft bread crumbs
  • 1 large onion, chopped
  • 1 tablespoon melted margarine
  • 1/4 cup diced celery
  • 1 cup milk (1%)
  • 1 tablespoon lemon juice
  • 2 teaspoons dried parsley
  • 1 large egg

Method

  1. 1 Preheat oven to 325°F. Lightly oil a 9x5 inch loaf pan.
  2. 2 Drain salmon, remove skin if desired, and mash bones with the meat.
  3. 3 Add bread crumbs, onion, margarine, celery, lemon juice, parsley, and egg to the salmon.
  4. 4 Stir in enough milk to make the mixture moist but not runny.
  5. 5 Press mixture into the prepared loaf pan.
  6. 6 Bake for 45 minutes. Serve warm.
