Sally Lunn Cake

Ingredients

  • 2 cups flour, sifted
  • 3 tsp baking powder
  • ½ tsp salt
  • 3 tbsp sugar
  • 2 eggs, separated
  • ½ cup milk
  • ½ cup shortening, melted

Method

  1. 1 Sift together flour, baking powder, salt, and sugar.
  2. 2 Combine beaten egg yolks and milk, then stir into the dry ingredients until just mixed.
  3. 3 Fold in melted shortening, then gently fold in stiffly beaten egg whites.
  4. 4 Pour batter into a greased 9-inch square pan.
  5. 5 Bake at 350°F for about 30 minutes.
  6. 6 Cut into 3-inch squares to serve.
