Sally Lunn Cake
Ingredients
- 2 cups flour, sifted
- 3 tsp baking powder
- ½ tsp salt
- 3 tbsp sugar
- 2 eggs, separated
- ½ cup milk
- ½ cup shortening, melted
Method
- 1 Sift together flour, baking powder, salt, and sugar.
- 2 Combine beaten egg yolks and milk, then stir into the dry ingredients until just mixed.
- 3 Fold in melted shortening, then gently fold in stiffly beaten egg whites.
- 4 Pour batter into a greased 9-inch square pan.
- 5 Bake at 350°F for about 30 minutes.
- 6 Cut into 3-inch squares to serve.
