Sago Chicken Soup

Ingredients

  • 1 chicken, cut into 4 quarters
  • 1 quart water
  • 2 ounces sago
  • 1 small sprig thyme
  • 1 small sprig parsley
  • salt to taste

Method

  1. 1 Clean, singe, and cut the chicken into four quarters. Place in a clean saucepan with a quart of water.
  2. 2 Bring to a boil over heat. Skim well to remove impurities.
  3. 3 Add sago, thyme, parsley, and salt. Boil gently for one hour.
  4. 4 Serve the broth with sago in a cup. Serve the chicken separately if desired.
