Sage Succotash With Lima Beans And Corn
Ingredients
- 1/4 cup olive oil
- 1 cup onion, diced
- 2 garlic cloves, finely chopped
- 2 cups red bell pepper, diced
- 2 cups zucchini, diced
- 2 cups yellow summer squash, diced
- 3 cups frozen lima beans
- 3 cups frozen corn kernels
- 2 teaspoons dried sage (or 2 tablespoons fresh, coarsely chopped)
Method
- 1 Heat olive oil in a large skillet over medium-high heat.
- 2 Add diced onion and cook until translucent, about 2 minutes. Add garlic, bell peppers, zucchini, squash, lima beans, and corn.
- 3 Season with salt and pepper to taste. Cook, stirring occasionally, until vegetables are tender, about 10 minutes.
- 4 Stir in the sage and serve immediately.
