Sage Couscous With Peas

Ingredients

  • 1/2 onion, finely chopped
  • 1 teaspoon ground sage
  • 1 1/3 cups olive oil
  • 1 cup water
  • 1 cup frozen green peas
  • 1/2 cup couscous
  • 1/2 teaspoon salt, optional

Method

  1. 1 Combine oil and onions in a heavy skillet.
  2. 2 Sauté for 5-10 minutes until lightly browned.
  3. 3 Add peas, sage, water, couscous, and salt if desired.
  4. 4 Cover and cook on low for about 5 minutes or until peas are tender and water is absorbed.
  5. 5 Fluff with a fork.
