Sage Couscous With Peas
Ingredients
- 1/2 onion, finely chopped
- 1 teaspoon ground sage
- 1 1/3 cups olive oil
- 1 cup water
- 1 cup frozen green peas
- 1/2 cup couscous
- 1/2 teaspoon salt, optional
Method
- 1 Combine oil and onions in a heavy skillet.
- 2 Sauté for 5-10 minutes until lightly browned.
- 3 Add peas, sage, water, couscous, and salt if desired.
- 4 Cover and cook on low for about 5 minutes or until peas are tender and water is absorbed.
- 5 Fluff with a fork.
