Ingredients

  • 1 lb pork fillet or leg, diced
  • 2 oz pork fat, diced
  • 1/4 tsp ground cloves
  • 1/4 tsp ground mace
  • 1/2 tsp black pepper
  • 1 handful fresh sage, finely minced
  • 1 tsp salt
  • Pork casings

Method

  1. 1 Dice the pork meat and fat into small, uniform cubes.
  2. 2 In a bowl, combine the pork, fat, cloves, mace, pepper, minced sage, and salt. Mix thoroughly.
  3. 3 Stuff the mixture into prepared pork casings, twisting into links.
  4. 4 Hang the links in a cool, airy place to dry for a few hours or overnight.
  5. 5 Boil the links in water until cooked through, about 15-20 minutes.
