Sage And Spice Pork Sausages
Ingredients
- 1 lb pork fillet or leg, diced
- 2 oz pork fat, diced
- 1/4 tsp ground cloves
- 1/4 tsp ground mace
- 1/2 tsp black pepper
- 1 handful fresh sage, finely minced
- 1 tsp salt
- Pork casings
Method
- 1 Dice the pork meat and fat into small, uniform cubes.
- 2 In a bowl, combine the pork, fat, cloves, mace, pepper, minced sage, and salt. Mix thoroughly.
- 3 Stuff the mixture into prepared pork casings, twisting into links.
- 4 Hang the links in a cool, airy place to dry for a few hours or overnight.
- 5 Boil the links in water until cooked through, about 15-20 minutes.
