Saffron Rose Water Oatmeal Pudding

Ingredients

  • 1 cup whole oatmeal
  • 4 cups water
  • ½ cup raisins, washed
  • 1 large mace blade
  • 1 pinch salt
  • 1 tsp mixed sweet herbs
  • 1 tsp rose water
  • 1 pinch saffron
  • 2 tbsp butter
  • 3-4 egg yolks

Method

  1. 1 Boil the whole oatmeal in water until tender, then strain through a fine sieve.
  2. 2 Return the strained oatmeal to a pot with fresh boiling water, raisins, mace, salt, sweet herbs, rose water, and saffron.
  3. 3 Simmer gently until the raisins are plump and the mixture is thickened.
  4. 4 Stir in butter and the strained egg yolks, heating gently until warmed through but not curdled.
