Saffron Rose Water Oatmeal Pudding
Ingredients
- 1 cup whole oatmeal
- 4 cups water
- ½ cup raisins, washed
- 1 large mace blade
- 1 pinch salt
- 1 tsp mixed sweet herbs
- 1 tsp rose water
- 1 pinch saffron
- 2 tbsp butter
- 3-4 egg yolks
Method
- 1 Boil the whole oatmeal in water until tender, then strain through a fine sieve.
- 2 Return the strained oatmeal to a pot with fresh boiling water, raisins, mace, salt, sweet herbs, rose water, and saffron.
- 3 Simmer gently until the raisins are plump and the mixture is thickened.
- 4 Stir in butter and the strained egg yolks, heating gently until warmed through but not curdled.
