Saffron Lentil And Cheese Patties
Ingredients
- 1 cup dried lentils, cleaned
- 1 tbsp olive oil
- Salt to taste
- Saffron threads
- Fresh herbs (such as parsley or rosemary)
- 2 eggs, beaten
- 2 oz hard cheese (such as Parmesan), grated
- 4 oz fresh pork (optional)
Method
- 1 Clean the lentils, removing any stones. Place them in a pot with olive oil, salt, saffron, and fresh herbs. Cover with water and simmer until tender.
- 2 Once the lentils are cooked, mash them well. Stir in the beaten eggs and grated hard cheese. Serve immediately.
- 3 Alternatively, cook the lentils with fresh pork until tender. Serve without eggs or cheese for a simpler dish.
