Saffron Creamed Wheat Porridge

Ingredients

  • 1 cup wheat berries
  • 2 cups cream or milk
  • 1 strip mace
  • 1 pinch salt
  • 1 whole cinnamon stick
  • 1 pinch saffron
  • Sugar to taste

Method

  1. 1 Wet wheat berries, hull them thoroughly to remove dust and husks, then rinse well.
  2. 2 Boil the hulled wheat overnight in water, letting it soak on low heat for at least 8 hours.
  3. 3 Drain the soaked wheat and place it in a saucepan with cream or milk.
  4. 4 Add mace, salt, cinnamon stick, and saffron (or egg yolks) to the pan.
  5. 5 Simmer over medium heat, stirring frequently, until the mixture thickens to a porridge consistency.
  6. 6 Remove the cinnamon stick and mace, then serve in a bowl topped with sugar.
