Saffron Creamed Wheat Porridge
Ingredients
- 1 cup wheat berries
- 2 cups cream or milk
- 1 strip mace
- 1 pinch salt
- 1 whole cinnamon stick
- 1 pinch saffron
- Sugar to taste
Method
- 1 Wet wheat berries, hull them thoroughly to remove dust and husks, then rinse well.
- 2 Boil the hulled wheat overnight in water, letting it soak on low heat for at least 8 hours.
- 3 Drain the soaked wheat and place it in a saucepan with cream or milk.
- 4 Add mace, salt, cinnamon stick, and saffron (or egg yolks) to the pan.
- 5 Simmer over medium heat, stirring frequently, until the mixture thickens to a porridge consistency.
- 6 Remove the cinnamon stick and mace, then serve in a bowl topped with sugar.
