Rye Cornmeal Waffles
Ingredients
- 1 cup rye flour
- 1/2 cup cornmeal
- 1 teaspoon salt
- 4 teaspoons baking powder
- 1 tablespoon melted fat
- 2 eggs
- 1 1/2 cups milk
Method
- 1 Sift the dry ingredients (rye flour, cornmeal, salt, and baking powder) together into a bowl.
- 2 Beat the egg yolks into the milk, then pour this mixture into the dry ingredients.
- 3 Stir in the melted fat. Fold in the stiffly beaten egg whites gently until combined.
- 4 Pour batter onto a hot waffle iron. If waffles are not crisp, add a little more liquid to the batter.
