Rye Cornmeal Waffles

Ingredients

  • 1 cup rye flour
  • 1/2 cup cornmeal
  • 1 teaspoon salt
  • 4 teaspoons baking powder
  • 1 tablespoon melted fat
  • 2 eggs
  • 1 1/2 cups milk

Method

  1. 1 Sift the dry ingredients (rye flour, cornmeal, salt, and baking powder) together into a bowl.
  2. 2 Beat the egg yolks into the milk, then pour this mixture into the dry ingredients.
  3. 3 Stir in the melted fat. Fold in the stiffly beaten egg whites gently until combined.
  4. 4 Pour batter onto a hot waffle iron. If waffles are not crisp, add a little more liquid to the batter.
