Russian Potato Salad With Beets And Eggs

Ingredients

  • 4 cups cold boiled potatoes, cubed
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 4 tbsp oil
  • 2 tbsp vinegar
  • 1/2 tbsp chives, finely cut (optional)
  • 2 hard-boiled eggs, chopped
  • 2 red beets, cold boiled and finely chopped
  • 1 tbsp vinegar
  • Fresh parsley sprigs

Method

  1. 1 Cube cold boiled potatoes and toss with salt, pepper, oil, and 2 tablespoons vinegar.
  2. 2 Mix chopped beets with 1 tablespoon vinegar and let stand for 15 minutes.
  3. 3 Arrange potato salad in a mound. Place chopped egg whites on one quarter and chopped yolks on another.
  4. 4 Place dressed beets on the remaining quarters. Garnish with parsley sprigs and at the base.
