Russian Potato Salad With Beets And Eggs
Ingredients
- 4 cups cold boiled potatoes, cubed
- 1/2 tsp salt
- 1/4 tsp pepper
- 4 tbsp oil
- 2 tbsp vinegar
- 1/2 tbsp chives, finely cut (optional)
- 2 hard-boiled eggs, chopped
- 2 red beets, cold boiled and finely chopped
- 1 tbsp vinegar
- Fresh parsley sprigs
Method
- 1 Cube cold boiled potatoes and toss with salt, pepper, oil, and 2 tablespoons vinegar.
- 2 Mix chopped beets with 1 tablespoon vinegar and let stand for 15 minutes.
- 3 Arrange potato salad in a mound. Place chopped egg whites on one quarter and chopped yolks on another.
- 4 Place dressed beets on the remaining quarters. Garnish with parsley sprigs and at the base.
