Rum And Raisin Semolina Pudding
Ingredients
- 1 1/2 pints milk
- 4 oz granulated sugar
- 5 oz semolina
- 6 egg yolks
- 2 egg whites
- Grated lemon peel
- 3/4 oz sultanas (golden raisins)
- 2 small glasses rum
- Butter for greasing mold
- Whipped cream with vanilla (optional)
- Zabaglione (optional)
Method
- 1 In a saucepan, bring 1 1/2 pints milk and 4 oz sugar to a boil.
- 2 Gradually whisk in 5 oz semolina. Boil for 15 minutes, stirring constantly with a wooden spoon until thick.
- 3 Remove from heat and let cool slightly. Stir in beaten egg yolks, whites, lemon peel, sultanas, and rum until smooth.
- 4 Pour into a buttered mold. Serve hot or cold.
- 5 If serving cold, surround with vanilla whipped cream. If hot, serve with zabaglione.
