Ingredients

  • 1 1/2 pints milk
  • 4 oz granulated sugar
  • 5 oz semolina
  • 6 egg yolks
  • 2 egg whites
  • Grated lemon peel
  • 3/4 oz sultanas (golden raisins)
  • 2 small glasses rum
  • Butter for greasing mold
  • Whipped cream with vanilla (optional)
  • Zabaglione (optional)

Method

  1. 1 In a saucepan, bring 1 1/2 pints milk and 4 oz sugar to a boil.
  2. 2 Gradually whisk in 5 oz semolina. Boil for 15 minutes, stirring constantly with a wooden spoon until thick.
  3. 3 Remove from heat and let cool slightly. Stir in beaten egg yolks, whites, lemon peel, sultanas, and rum until smooth.
  4. 4 Pour into a buttered mold. Serve hot or cold.
  5. 5 If serving cold, surround with vanilla whipped cream. If hot, serve with zabaglione.
