Royal Icing

Ingredients

  • 1 egg white
  • 1 cup powdered sugar
  • 1 tsp lemon juice or other flavoring
  • 1 tsp water

Method

  1. 1 Place the egg white in a bowl and add lemon juice and water.
  2. 2 Stir in powdered sugar until the mixture reaches a spreadable consistency.
  3. 3 While the cake is still warm, pile the icing on the center.
  4. 4 Use a wet knife to smooth the icing over the top and sides of the cake.
  5. 5 For decorating, beat the egg white to a froth, then beat in the sugar until firm.
  6. 6 Pipe the icing using a pastry bag with a small tube or a paper funnel.
