Royal Icing
Ingredients
- 1 egg white
- 1 cup powdered sugar
- 1 tsp lemon juice or other flavoring
- 1 tsp water
Method
- 1 Place the egg white in a bowl and add lemon juice and water.
- 2 Stir in powdered sugar until the mixture reaches a spreadable consistency.
- 3 While the cake is still warm, pile the icing on the center.
- 4 Use a wet knife to smooth the icing over the top and sides of the cake.
- 5 For decorating, beat the egg white to a froth, then beat in the sugar until firm.
- 6 Pipe the icing using a pastry bag with a small tube or a paper funnel.
