Rough Puff Pastry
Ingredients
- 2 cups flour
- 1/2 cup Crisco
- 1/2 teaspoon salt
- 1 teaspoon lemon juice
- 1 egg
- cold water
Method
- 1 Sift flour and salt into a bowl. Cut cold, firm Crisco into 1-inch pieces and incorporate into the flour.
- 2 Beat the egg with lemon juice and a little cold water. Gradually add this mixture to the flour mixture to form a stiff paste.
- 3 Roll the dough into a long strip on a floured board. Fold it into thirds, turning rough edges toward you.
- 4 Roll out again and repeat the folding process five times total. Refrigerate for 10 minutes between each rolling.
- 5 Use immediately or let stand in a cool place for a few hours. Bake in a hot oven (425°F) for pies.
