Rosemary Roasted Potatoes
Ingredients
- 1 pound potatoes (3 medium or 3 cups cubed)
- 2 teaspoons vegetable oil
- 1/2 teaspoon rosemary
- 1/2 teaspoon salt

Method
- 1 Preheat the oven to 450°F.
- 2 Coat a baking sheet with vegetable cooking spray.
- 3 Wash, peel, and cut potatoes into ½-inch cubes, placing them in a large bowl.
- 4 Whisk together vegetable oil, rosemary, and salt in a small bowl.
- 5 Pour the oil mixture over the potatoes and stir to coat evenly.
- 6 Spread potatoes on the baking sheet and bake for 25-30 minutes until lightly browned.
