Rose Water Wafer Cookies
Ingredients
- 1 cup flour
- 3 eggs, beaten
- 1 tbsp brandy
- 1 tbsp powdered sugar
- 1 tbsp vegetable oil
- Pinch of salt
- Milk, as needed
- 1 tbsp rose water
Method
- 1 Sift 1 cup flour into a bowl. Make a well in the center.
- 2 Add 3 beaten eggs, 1 tbsp brandy, 1 tbsp sugar, 1 tbsp oil, and a pinch of salt to the well.
- 3 Mix ingredients, gradually adding milk until batter reaches the consistency of heavy cream. Stir in 1 tbsp rose water.
- 4 Heat a wafer iron over a clear fire (do not let it get red-hot). Grease plates with oil or butter.
- 5 Pour about 2 tbsp batter onto each plate. Close iron and bake, turning frequently, until lightly colored.
- 6 Remove wafers, sprinkle with powdered sugar, and immediately roll up while warm to seal edges.
