Rose Water Almond Tarts
Ingredients
- ½ lb sweet almonds, shelled
- 3 oz bitter almonds, shelled
- Rose water
- ¼ lb loaf sugar, powdered
- Juice of ½ lemon
- Grated peel of ½ lemon
- Fine pastry dough
Method
- 1 Blanch the sweet and bitter almonds.
- 2 Beat almonds in a mortar, adding rose water as needed.
- 3 Mix in powdered sugar, lemon juice, and grated lemon peel.
- 4 Cut pastry into circles; fill with almond mixture.
- 5 Cover with pastry lids, crimp edges, and bake for 30 minutes.
- 6 Grate sugar over tarts when done.
