  • ½ lb sweet almonds, shelled
  • 3 oz bitter almonds, shelled
  • Rose water
  • ¼ lb loaf sugar, powdered
  • Juice of ½ lemon
  • Grated peel of ½ lemon
  • Fine pastry dough

Method

  1. 1 Blanch the sweet and bitter almonds.
  2. 2 Beat almonds in a mortar, adding rose water as needed.
  3. 3 Mix in powdered sugar, lemon juice, and grated lemon peel.
  4. 4 Cut pastry into circles; fill with almond mixture.
  5. 5 Cover with pastry lids, crimp edges, and bake for 30 minutes.
  6. 6 Grate sugar over tarts when done.
