Rose Water Almond Brittle

Ingredients

  • 1 lb almonds
  • 1.25 lb granulated sugar
  • Rose water
  • 1 lemon (juice and zest)

Method

  1. 1 Soak almonds overnight in water. Blanch them the next day by warming in water, then peel and grind into a fine paste with rose water.
  2. 2 Dissolve sugar in water and boil to candy height (soft-ball stage, approx 235°F).
  3. 3 Add ground almonds and three spoonfuls of rose water to the hot candy. Stir in lemon juice and grated lemon rind.
  4. 4 Drop mixture onto glass or clean boards. Dry in a warm oven or stove for 12 hours, turning once to dry the other side.
