Roasted Wild Duck With Orange Sauce

Ingredients

  • 2 wild ducks
  • Butter, for basting
  • Juice of 1 lemon
  • Rind of 2 oranges, shredded finely
  • Water, for parboiling
  • 1 oz butter
  • 2 tsp flour
  • Water, for moistening flour
  • Juice of 2 oranges
  • Clear gravy
  • Salt
  • Pepper
  • Cayenne

Method

  1. 1 Roast the wild ducks over a brisk fire, basting constantly with butter and lemon juice. Cook until desired doneness.
  2. 2 Shred orange rind finely and parboil in a little water. Set aside.
  3. 3 Melt 1 oz butter in a saucepan. Stir in flour moistened with a little water to form a roux.
  4. 4 Add orange juice, clear gravy, salt, pepper, and cayenne. Stir well over heat.
  5. 5 Add the parboiled orange rind. Bring to a boil and keep hot until serving.
