Roasted Wild Duck With Orange Sauce
Ingredients
- 2 wild ducks
- Butter, for basting
- Juice of 1 lemon
- Rind of 2 oranges, shredded finely
- Water, for parboiling
- 1 oz butter
- 2 tsp flour
- Water, for moistening flour
- Juice of 2 oranges
- Clear gravy
- Salt
- Pepper
- Cayenne
Method
- 1 Roast the wild ducks over a brisk fire, basting constantly with butter and lemon juice. Cook until desired doneness.
- 2 Shred orange rind finely and parboil in a little water. Set aside.
- 3 Melt 1 oz butter in a saucepan. Stir in flour moistened with a little water to form a roux.
- 4 Add orange juice, clear gravy, salt, pepper, and cayenne. Stir well over heat.
- 5 Add the parboiled orange rind. Bring to a boil and keep hot until serving.
