Roasted Wild Duck With Anchovy Gravy

Ingredients

  • Wild ducks or teal, dressed
  • 1 small onion
  • Pepper
  • Salt
  • 1 tbsp red wine
  • Duck necks and gizzards
  • 1 tbsp red wine
  • 1 anchovy
  • 1-2 blades of mace
  • 1 onion
  • Cayenne pepper
  • Onion sauce
  • Breadcrumbs

Method

  1. 1 Stuff the dressed ducks with a small onion, pepper, salt, and 1 tbsp red wine.
  2. 2 Roast over a good fire for 20 minutes.
  3. 3 Boil necks, gizzards, 1 tbsp red wine, 1 anchovy, mace, 1 onion, and cayenne until reduced to ½ pint.
  4. 4 Strain the gravy through a fine sieve and pour over the ducks.
  5. 5 Serve with onion sauce in a boat and garnish with breadcrumbs.
