Roasted Turkey With Parsley Onion Stuffing

Ingredients

  • 1 bunch parsley, chopped
  • 1 quart onions, chopped
  • 1.25 lbs stale bread, cubed
  • 1 tbsp salt
  • 1 tsp pepper
  • 1.5 tsp poultry seasoning
  • 0.5 cup melted shortening
  • 1 cup flour
  • 1 turkey

Method

  1. 1 Chop celery, onions, and parsley. Combine with cubed stale bread, salt, pepper, poultry seasoning, and melted shortening. Mix thoroughly.
  2. 2 Stuff the turkey cavity with the mixture. Sew the opening closed with a needle and string. Pat the bird with shortening and dust with flour.
  3. 3 Roast in a hot oven (425°F) until the skin browns slightly. Reduce heat to moderate (350°F), turn breast down, and baste every 10 minutes.
  4. 4 Continue roasting for approximately 3.5 hours, or 20 minutes per pound, until fully cooked.
