  • 1 turkey
  • salt
  • bacon strips (for larding)
  • sausage meat OR boiled, peeled, mashed chestnuts OR force-meat stuffing ingredients
  • liver, heart, and gizzard (for force-meat)
  • chopped parsley
  • chopped onions
  • sweet herbs
  • grated bread
  • butter
  • lemon juice
  • grated lemon peel
  • 1-2 egg yolks (for stuffing)
  • 1 egg yolk (for thickening gravy)

Method

  1. 1 Rub the turkey all over with salt and lard it with bacon strips.
  2. 2 Prepare your chosen stuffing: sausage meat, mashed chestnuts, or a mixture of chopped giblets, herbs, bread, butter, lemon, and egg yolk.
  3. 3 Stuff the turkey and roast in a moderate oven (350°F) for at least two hours.
  4. 4 Thicken the gravy by stirring in an egg yolk just before serving.
