Roasted Turkey With Bacon Larding
Ingredients
- 1 turkey
- salt
- bacon strips (for larding)
- sausage meat OR boiled, peeled, mashed chestnuts OR force-meat stuffing ingredients
- liver, heart, and gizzard (for force-meat)
- chopped parsley
- chopped onions
- sweet herbs
- grated bread
- butter
- lemon juice
- grated lemon peel
- 1-2 egg yolks (for stuffing)
- 1 egg yolk (for thickening gravy)
Method
- 1 Rub the turkey all over with salt and lard it with bacon strips.
- 2 Prepare your chosen stuffing: sausage meat, mashed chestnuts, or a mixture of chopped giblets, herbs, bread, butter, lemon, and egg yolk.
- 3 Stuff the turkey and roast in a moderate oven (350°F) for at least two hours.
- 4 Thicken the gravy by stirring in an egg yolk just before serving.
