Roasted Tomatoes With Garlic And Parmesan

  • cooking oil spray, as needed
  • 6 tomatoes, washed
  • 1/2 tablespoon olive oil (or canola oil)
  • 1 teaspoon pepper
  • 1 tablespoon dried parsley
  • 2 tablespoons garlic, minced
  • Parmesan cheese

Method

  1. 1 Preheat oven to 425°F. Spray a large baking sheet with cooking oil spray.
  2. 2 Cut each tomato in half and place them on the sheet, cut side up.
  3. 3 Drizzle tomatoes with half of the oil and season with pepper.
  4. 4 Cook for 30 minutes, or until tomatoes are beginning to brown on the bottom.
  5. 5 Mix the remaining oil, parsley, garlic, and cheese in a small bowl.
  6. 6 Remove tomatoes from the oven and sprinkle the herb mixture over them. Return to oven for 10 minutes until spices begin to brown.
