Roasted Tomatoes With Garlic And Parmesan
Ingredients
- cooking oil spray, as needed
- 6 tomatoes, washed
- 1/2 tablespoon olive oil (or canola oil)
- 1 teaspoon pepper
- 1 tablespoon dried parsley
- 2 tablespoons garlic, minced
- Parmesan cheese
Method
- 1 Preheat oven to 425°F. Spray a large baking sheet with cooking oil spray.
- 2 Cut each tomato in half and place them on the sheet, cut side up.
- 3 Drizzle tomatoes with half of the oil and season with pepper.
- 4 Cook for 30 minutes, or until tomatoes are beginning to brown on the bottom.
- 5 Mix the remaining oil, parsley, garlic, and cheese in a small bowl.
- 6 Remove tomatoes from the oven and sprinkle the herb mixture over them. Return to oven for 10 minutes until spices begin to brown.
