Roasted Tomato And Capsicum Sauce
Ingredients
- 12-15 ripe red tomatoes
- Capsicums (to taste)
- 2-3 tablespoons beef gravy
- White pepper
- Salt
- Tarragon vinegar or shallot (optional)
Method
- 1 Cut tomatoes in half and squeeze out all water and seeds.
- 2 Add capsicums and beef gravy to the tomatoes.
- 3 Simmer on low heat for one hour until melted.
- 4 Rub the mixture through a sieve into a clean pan.
- 5 Season with white pepper and salt, then simmer for a few minutes.
