Roasted Tomato And Capsicum Sauce

Ingredients

  • 12-15 ripe red tomatoes
  • Capsicums (to taste)
  • 2-3 tablespoons beef gravy
  • White pepper
  • Salt
  • Tarragon vinegar or shallot (optional)

Method

  1. 1 Cut tomatoes in half and squeeze out all water and seeds.
  2. 2 Add capsicums and beef gravy to the tomatoes.
  3. 3 Simmer on low heat for one hour until melted.
  4. 4 Rub the mixture through a sieve into a clean pan.
  5. 5 Season with white pepper and salt, then simmer for a few minutes.
