Roasted Tomatillo Salsa With Pan Fried Tilapia
Ingredients
- 1/2 pound tomatillos
- 2 yellow onions, peeled and finely chopped
- 3 serrano peppers, finely chopped
- 3 cloves garlic, peeled and minced
- 1 teaspoon vegetable oil
- 1/4 teaspoon Kosher salt
- 1/4 cup fresh lime juice
- 4 tablespoons fresh cilantro leaves, chopped
- tilapia fillets, patted dry
Method
- 1 Preheat oven to 450°F. Peel, rinse, and quarter tomatillos.
- 2 Place tomatillos, onion, chiles, garlic, and 1 tsp oil in a baking pan. Roast for 20 minutes until soft and dark green. Cool slightly.
- 3 Blend roasted mixture with salt, lime juice, and cilantro until puréed. Set salsa aside.
- 4 Heat remaining oil in a skillet over high heat. Add tilapia fillets, cooking 5-6 minutes per side until golden brown.
- 5 Transfer fish to plates, top generously with salsa, and serve immediately.
