Roasted Sweet Potato And Apple Salad

Ingredients

  • 2-3 sweet potatoes, diced
  • 1 cup red apple, diced
  • 1/4 cup pomegranate seeds
  • 4 tablespoons unsalted pumpkin seeds (pepitas)
  • 1 tablespoon apple cider vinegar
  • 2 1/2 teaspoons extra virgin olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Method

  1. 1 Preheat oven to 400°F. Toss diced sweet potatoes with 1 teaspoon olive oil and roast on a baking sheet for 10 minutes until cooked. Cool.
  2. 2 In a large bowl, combine cooled sweet potatoes, diced apple, pomegranate seeds, and pumpkin seeds.
  3. 3 Whisk remaining olive oil, vinegar, salt, and pepper in a small bowl. Pour over salad and toss to coat lightly.
