Roasted Sweet Potato And Apple Salad
Ingredients
- 2-3 sweet potatoes, diced
- 1 cup red apple, diced
- 1/4 cup pomegranate seeds
- 4 tablespoons unsalted pumpkin seeds (pepitas)
- 1 tablespoon apple cider vinegar
- 2 1/2 teaspoons extra virgin olive oil
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Method
- 1 Preheat oven to 400°F. Toss diced sweet potatoes with 1 teaspoon olive oil and roast on a baking sheet for 10 minutes until cooked. Cool.
- 2 In a large bowl, combine cooled sweet potatoes, diced apple, pomegranate seeds, and pumpkin seeds.
- 3 Whisk remaining olive oil, vinegar, salt, and pepper in a small bowl. Pour over salad and toss to coat lightly.
