Roasted Stuffed Pork Loin With Sage
Ingredients
- 1 leg of pork (approx. 8 lbs)
- 1 chopped onion
- 1 cup chopped fresh sage
- 2 cups bread crumbs
- 2 eggs, beaten
- Salt to taste
- Pepper to taste
Method
- 1 Score the leg of pork with a sharp knife in half-inch gashes.
- 2 Mix chopped onion, sage, bread crumbs, beaten eggs, and salt to create the stuffing.
- 3 Stuff the knuckle and fill the gashes with the mixture. Season generously with pepper.
- 4 Roast in a steady fire for 3 hours, draining fat occasionally.
- 5 Make a brown gravy from the roasting drippings and serve with tart apple sauce.
