Roasted Stuffed Ducks With Apple And Onion

Ingredients

  • 2 young ducks
  • Salt and pepper
  • 1 large onion, halved
  • 1 apple, halved (unpeeled)
  • 1 ½ cups hot water
  • 1 tablespoon tart jelly
  • Stale bread, crusts removed
  • 1 tablespoon butter
  • Fresh parsley, chopped

Method

  1. 1 Preheat oven to 400°F. Wash and dry ducks; rub with salt and pepper. Place breast-down in a roasting pan.
  2. 2 Place halved onion and apple around the ducks. Add 1 ½ cups hot water. Cover and roast for 1 hour.
  3. 3 Turn ducks breast-up. Add tart jelly, remove lid, and baste frequently for another hour until done.
  4. 4 While roasting, mix bread crumbs, melted butter, salt, pepper, and parsley. Stuff the ducks before cooking.
  5. 5 Remove ducks. Pour off fat, leaving onion and apple in pan. Thicken pan juices to make gravy.
