Roasted Sage Pork Tenderloin With Sweet Potatoes

  • 2 pork tenderloins
  • Salt
  • Pepper
  • Powdered sage
  • 6 sweet potatoes, parboiled, peeled, and halved
  • Sugar

Method

  1. 1 Preheat oven to 425°F. Wipe pork tenderloins and place in a roasting pan.
  2. 2 Season with salt, pepper, and powdered sage. Brown quickly in the hot oven.
  3. 3 Bake for 45 minutes, basting 3-4 times.
  4. 4 Add parboiled, peeled, halved sweet potatoes sprinkled with sugar to the pan.
  5. 5 Cook until potatoes are soft, basting with pan juices as needed.
