Roasted Root Vegetables With Parmesan
Ingredients
- 2 medium root vegetables (potatoes, rutabagas, turnips, parsnips, beets, sweet potatoes, etc.)
- 1 chopped carrot
- 1 medium chopped onion
- 1/4 cup vegetable oil
- Parmesan cheese
Method
- 1 Preheat oven to 350°F.
- 2 Cut root vegetables, carrot, and onion into large chunks.
- 3 Place vegetables in a bowl, pour oil over top, add seasonings or Parmesan, and mix well.
- 4 Spread vegetables in an even layer on a baking sheet.
- 5 Bake for 1 hour or until tender.
