Roasted Pork With Tomato Herb Sauce

Ingredients

  • 1 piece pork for roasting
  • Salt and pepper
  • Flour for dredging
  • 1 pint hot water
  • 1 quart tomatoes, peeled
  • 1 onion, chopped
  • 1 teaspoon parsley, chopped
  • ½ teaspoon sage
  • ½ teaspoon thyme
  • Rice for serving

Method

  1. 1 Rub pork with salt and pepper, dredge with flour, and place in a pan with 1 pint hot water.
  2. 2 Roast in a 400°F oven for 2-3 hours, basting often.
  3. 3 Peel and mash tomatoes; mix with chopped onion, parsley, sage, and thyme.
  4. 4 Skim fat from pan juices, add tomato mixture, and bake 1 hour more.
  5. 5 Serve with rice.
