Roasted Pork With Tomato Herb Sauce
Ingredients
- 1 piece pork for roasting
- Salt and pepper
- Flour for dredging
- 1 pint hot water
- 1 quart tomatoes, peeled
- 1 onion, chopped
- 1 teaspoon parsley, chopped
- ½ teaspoon sage
- ½ teaspoon thyme
- Rice for serving
Method
- 1 Rub pork with salt and pepper, dredge with flour, and place in a pan with 1 pint hot water.
- 2 Roast in a 400°F oven for 2-3 hours, basting often.
- 3 Peel and mash tomatoes; mix with chopped onion, parsley, sage, and thyme.
- 4 Skim fat from pan juices, add tomato mixture, and bake 1 hour more.
- 5 Serve with rice.
