Roasted Pork Loin With Sweet Potatoes And Apples
Ingredients
- 1 loin of pork
- Salt and pepper to taste
- Hot water
- Sweet potatoes, peeled and halved
- Sugar
- Red cooking apples, cored but unpeeled
- Flour (for gravy)
Method
- 1 Season the pork loin with salt and pepper. Roast in the oven for 2.5 hours, basting frequently with drippings and hot water.
- 2 About one hour before the pork is done, add the halved sweet potatoes to the pan and sprinkle with sugar.
- 3 Fifteen minutes later, add the cored red apples to the pan. Continue baking until the pork and vegetables are tender, basting frequently.
- 4 Remove the meat and vegetables. Thicken the pan drippings with flour to make a gravy. Serve the pork and vegetables with the gravy on the side.
