Roasted Pintail Duck With Cayenne And Lemon
Ingredients
- 1 pintail duck
- flour for dusting
- butter for basting
- cayenne pepper
- lemon, cut into wedges
Method
- 1 Preheat oven to 425°F (hot oven).
- 2 Flour the duck well and place it in the roasting pan.
- 3 Roast for 25 minutes, turning briskly and basting constantly with butter.
- 4 Score the breast and sprinkle with a little cayenne pepper.
- 5 Place near the heat source for 2-3 minutes to yield rich gravy.
- 6 Serve with cut lemon wedges on the side.
