Roasted Mutton Shoulder With Buttered White Beans

Ingredients

  • 1 handful dried white haricots (white kidney beans)
  • 1 shoulder of mutton
  • 1 clove garlic, halved
  • Salt to taste
  • 2 tbsp butter

Method

  1. 1 Soak the dried haricots in water overnight.
  2. 2 Drain the haricots and simmer them in salted water for 2 hours until tender.
  3. 3 Rub the shoulder of mutton with the cut sides of the garlic clove.
  4. 4 Roast the mutton in a moderate oven (350°F) until fully cooked.
  5. 5 Stir the butter into the cooked haricots.
  6. 6 Serve the roasted mutton with the buttered haricots arranged around it.
