Roasted Mutton Shoulder With Buttered White Beans
Ingredients
- 1 handful dried white haricots (white kidney beans)
- 1 shoulder of mutton
- 1 clove garlic, halved
- Salt to taste
- 2 tbsp butter
Method
- 1 Soak the dried haricots in water overnight.
- 2 Drain the haricots and simmer them in salted water for 2 hours until tender.
- 3 Rub the shoulder of mutton with the cut sides of the garlic clove.
- 4 Roast the mutton in a moderate oven (350°F) until fully cooked.
- 5 Stir the butter into the cooked haricots.
- 6 Serve the roasted mutton with the buttered haricots arranged around it.
