Roasted Marinated Mutton Shoulder
Ingredients
- 1 shoulder of mutton (approx. 4 lbs)
- 1 cup oil
- 1 cup vinegar
- 1 cup white wine
- 1 cup red wine
- 1 onion stuffed with cloves
- Fresh thyme, parsley, marjoram, sage, and mint
- A few bay leaves
- 2 medium carrots, sliced
Method
- 1 Combine oil, vinegar, white wine, red wine, clove-stuffed onion, herbs, and sliced carrots in a deep dish.
- 2 Submerge the shoulder of mutton in the mixture and marinate for 4 days, turning occasionally and pouring liquid over it.
- 3 Remove meat from marinade; optionally lard the meat with strips of fat.
- 4 Roast in front of a fire or bake at 350°F, basting frequently with the marinade.
- 5 Bake for 50 minutes for a 4-pound shoulder.
