Roasted Marinated Mutton Shoulder

Ingredients

  • 1 shoulder of mutton (approx. 4 lbs)
  • 1 cup oil
  • 1 cup vinegar
  • 1 cup white wine
  • 1 cup red wine
  • 1 onion stuffed with cloves
  • Fresh thyme, parsley, marjoram, sage, and mint
  • A few bay leaves
  • 2 medium carrots, sliced

Method

  1. 1 Combine oil, vinegar, white wine, red wine, clove-stuffed onion, herbs, and sliced carrots in a deep dish.
  2. 2 Submerge the shoulder of mutton in the mixture and marinate for 4 days, turning occasionally and pouring liquid over it.
  3. 3 Remove meat from marinade; optionally lard the meat with strips of fat.
  4. 4 Roast in front of a fire or bake at 350°F, basting frequently with the marinade.
  5. 5 Bake for 50 minutes for a 4-pound shoulder.
