  • 1 guinea hen, split and cleaned
  • Shortening
  • Flour
  • Boiling water
  • Bacon strips
  • 3 onions, minced
  • 1 green pepper, minced

Method

  1. 1 Split the hen down the back, remove the breast bone, wash, and wipe dry.
  2. 2 Rub the hen well with shortening and dust with flour.
  3. 3 Place in a baking pan and put in a hot oven (425°F) for 10 minutes.
  4. 4 Reduce heat to moderate (350°F) and cook for 40 minutes, basting every 10 minutes with boiling water.
  5. 5 In the last 10 minutes, cover the hen with bacon strips, minced onions, and minced green pepper.
