Roasted Guinea Hen With Bacon And Peppers
Ingredients
- 1 guinea hen, split and cleaned
- Shortening
- Flour
- Boiling water
- Bacon strips
- 3 onions, minced
- 1 green pepper, minced
Method
- 1 Split the hen down the back, remove the breast bone, wash, and wipe dry.
- 2 Rub the hen well with shortening and dust with flour.
- 3 Place in a baking pan and put in a hot oven (425°F) for 10 minutes.
- 4 Reduce heat to moderate (350°F) and cook for 40 minutes, basting every 10 minutes with boiling water.
- 5 In the last 10 minutes, cover the hen with bacon strips, minced onions, and minced green pepper.
