Roasted Guinea Fowl With Vegetables

  • 2 guinea chickens
  • salt
  • melted butter
  • sliced carrots
  • sliced potatoes
  • sliced celery

Method

  1. 1 Clean and truss the guinea chickens.
  2. 2 Arrange sliced carrots, potatoes, and celery in the bottom of a casserole or large bean-pot.
  3. 3 Place the birds on the vegetable bed, sprinkle with salt, and pour melted butter over them.
  4. 4 Cover and bake in a moderate oven (350°F) for 1 hour and 15 minutes, basting every 15 minutes with melted butter.
  5. 5 Do not add water to the casserole during cooking.
