Roasted Guinea Fowl With Vegetables
Ingredients
- 2 guinea chickens
- salt
- melted butter
- sliced carrots
- sliced potatoes
- sliced celery
Method
- 1 Clean and truss the guinea chickens.
- 2 Arrange sliced carrots, potatoes, and celery in the bottom of a casserole or large bean-pot.
- 3 Place the birds on the vegetable bed, sprinkle with salt, and pour melted butter over them.
- 4 Cover and bake in a moderate oven (350°F) for 1 hour and 15 minutes, basting every 15 minutes with melted butter.
- 5 Do not add water to the casserole during cooking.
