Roasted Grouse With Liver Toast
Ingredients
- 2 whole grouse
- 3 oz beef dripping or butter
- 2 slices toast
- 2 grouse livers
- 1 tbsp butter
- Salt to taste
- Cayenne pepper to taste
Method
- 1 Stuff each grouse with 1.5 oz of dripping or butter, avoiding the crop.
- 2 Roast the grouse, basting frequently until fully cooked.
- 3 Place a slice of toast in the roasting pan near the end of cooking.
- 4 Parboil the livers, then pound them with butter, salt, and cayenne.
- 5 Spread the liver mixture onto the toast and serve with the grouse.
