Ingredients

  • 2 whole grouse
  • 3 oz beef dripping or butter
  • 2 slices toast
  • 2 grouse livers
  • 1 tbsp butter
  • Salt to taste
  • Cayenne pepper to taste

Method

  1. 1 Stuff each grouse with 1.5 oz of dripping or butter, avoiding the crop.
  2. 2 Roast the grouse, basting frequently until fully cooked.
  3. 3 Place a slice of toast in the roasting pan near the end of cooking.
  4. 4 Parboil the livers, then pound them with butter, salt, and cayenne.
  5. 5 Spread the liver mixture onto the toast and serve with the grouse.
