Roasted Duck With Tomato Wine Sauce
Ingredients
- 1 whole duck, prepared
- 1 tbsp melted butter
- 2 onions
- 1 clove garlic
- 5-6 tomatoes
- ¼ cup white wine
- 1 cup chicken or beef bouillon
- 3-4 whole cloves
- 1 bay leaf
Method
- 1 Place the prepared duck in a casserole. Dredge with melted butter, add onions, garlic, and one clove.
- 2 Roast in the oven until onions are lightly browned, but not too dark. Remove the duck temporarily.
- 3 Add tomatoes, white wine, bouillon, remaining cloves, and bay leaf to the casserole. Bring to a boil over low heat.
- 4 Mash the tomatoes and onions into a sauce. Return the duck to the casserole and simmer for 40 minutes.
