Roasted Duck With Tomato Wine Sauce

Ingredients

  • 1 whole duck, prepared
  • 1 tbsp melted butter
  • 2 onions
  • 1 clove garlic
  • 5-6 tomatoes
  • ¼ cup white wine
  • 1 cup chicken or beef bouillon
  • 3-4 whole cloves
  • 1 bay leaf

Method

  1. 1 Place the prepared duck in a casserole. Dredge with melted butter, add onions, garlic, and one clove.
  2. 2 Roast in the oven until onions are lightly browned, but not too dark. Remove the duck temporarily.
  3. 3 Add tomatoes, white wine, bouillon, remaining cloves, and bay leaf to the casserole. Bring to a boil over low heat.
  4. 4 Mash the tomatoes and onions into a sauce. Return the duck to the casserole and simmer for 40 minutes.
