Roasted Chicken With Tomato Ham Sauce

  • 1 whole chicken
  • Butter
  • Assorted vegetables
  • Peppercorns
  • 2 quarts chicken stock
  • Well-boiled rice or macaroni
  • 2 lbs tomatoes
  • 1 cup chicken stock
  • ¼ lb chopped ham
  • 3 bay leaves
  • 1 onion
  • Cloves
  • 1 tsp Liebig extract

Method

  1. 1 Wrap the chicken in buttered paper and place in a fireproof dish with vegetables and peppercorns. Roast in a moderate oven (350°F) for about 2 hours.
  2. 2 Transfer the roasted chicken and vegetables to a pot with 2 quarts of stock. Simmer for 1 hour.
  3. 3 Prepare the sauce: Simmer tomatoes, 1 cup stock, chopped ham, bay leaves, onion stuck with cloves, and Liebig extract for 1.5 hours.
  4. 4 Serve the chicken and vegetables over boiled rice or macaroni, pouring the tomato sauce over the top.
