Roasted Chicken With Tomato Ham Sauce
Ingredients
- 1 whole chicken
- Butter
- Assorted vegetables
- Peppercorns
- 2 quarts chicken stock
- Well-boiled rice or macaroni
- 2 lbs tomatoes
- 1 cup chicken stock
- ¼ lb chopped ham
- 3 bay leaves
- 1 onion
- Cloves
- 1 tsp Liebig extract
Method
- 1 Wrap the chicken in buttered paper and place in a fireproof dish with vegetables and peppercorns. Roast in a moderate oven (350°F) for about 2 hours.
- 2 Transfer the roasted chicken and vegetables to a pot with 2 quarts of stock. Simmer for 1 hour.
- 3 Prepare the sauce: Simmer tomatoes, 1 cup stock, chopped ham, bay leaves, onion stuck with cloves, and Liebig extract for 1.5 hours.
- 4 Serve the chicken and vegetables over boiled rice or macaroni, pouring the tomato sauce over the top.
