Roasted Chicken With Potatoes, Carrots, And Onions
Ingredients
- 6 potatoes, sliced
- 1 carrot, sliced
- 1 large onion, quartered
- 1/2 lb chicken, cut into pieces, skin removed
- 1 teaspoon water
- 1/4 teaspoon thyme
- pepper
Method
- 1 Preheat oven to 400°F.
- 2 Place sliced potatoes, carrots, and quartered onion in a large roasting pan.
- 3 Arrange chicken pieces on top of the vegetables.
- 4 Mix water, thyme, and pepper; pour over chicken and vegetables.
- 5 Spoon juices over chicken once or twice during cooking.
- 6 Bake at 400°F for one hour or more until browned and tender.
