Roasted Chicken Sausage, Potato, And Apple Sheet Pan Dinner
Ingredients
- 1 pound red potatoes
- 1 tablespoon canola oil
- 2 red apples
- 1 yellow onion
- 12 ounces chicken herb link sausages
- 2 tablespoons cider vinegar
- 1/2 teaspoon ground mustard
- 1 tablespoon honey
Method
- 1 Preheat oven to 425°F. Cut potatoes into chunks and place in a 2-quart baking dish. Drizzle with oil and toss to coat.
- 2 Roast potatoes for 20 minutes. Meanwhile, cut apples and onion into chunks and slice sausages into 1/2-inch pieces.
- 3 Remove dish from oven and reduce heat to 375°F. Add apples, onion, sausage, vinegar, mustard, and honey. Toss to combine.
- 4 Return to oven and roast for 30 minutes until potatoes and apples are tender.
