Roasted Chestnut Soup

Ingredients

  • 1 quart chestnuts
  • 1 quart stock
  • 1 tablespoon butter
  • Salt and pepper to taste

Method

  1. 1 Shell the chestnuts and boil in water until skins loosen, then rub off skins.
  2. 2 Place chestnuts in a saucepan with stock and boil gently for 30 minutes.
  3. 3 Mash chestnuts through a colander back into the saucepan.
  4. 4 Stir in butter, salt, and pepper, boil briefly, and serve.
