Roasted Chestnut Soup
Ingredients
- 1 quart chestnuts
- 1 quart stock
- 1 tablespoon butter
- Salt and pepper to taste
Method
- 1 Shell the chestnuts and boil in water until skins loosen, then rub off skins.
- 2 Place chestnuts in a saucepan with stock and boil gently for 30 minutes.
- 3 Mash chestnuts through a colander back into the saucepan.
- 4 Stir in butter, salt, and pepper, boil briefly, and serve.
