  • Salt
  • Butter or dripping
  • Chopped parsley

Method

  1. 1 Peel potatoes and carve them into oval shapes using a knife.
  2. 2 Boil the potatoes in salted water for five minutes, then drain well.
  3. 3 Place potatoes on a baking sheet with salt and butter or dripping.
  4. 4 Roast in a very hot oven (425°F) for 30 minutes, turning occasionally.
  5. 5 Sprinkle with chopped parsley before serving.
