Roasted And Boiled Chicken With Peas
Ingredients
- 2 whole chickens, singed and trussed
- 1 cup fresh or frozen peas
- 1 tbsp butter
- 1 tsp salt
- 1 sprig fresh thyme
- 1 sprig fresh parsley
- 1 tsp sugar
- 1 cup water
Method
- 1 Boil one chicken until cooked through. Roast the second chicken until golden and cooked through.
- 2 Place both chickens in a saucepan with water, butter, salt, thyme, parsley, and sugar. Simmer on low heat until heated through.
- 3 Arrange the boiled chicken in a serving dish. Top with peas, then layer the roasted chicken on top. Serve immediately.
