  • 2 whole chickens, singed and trussed
  • 1 cup fresh or frozen peas
  • 1 tbsp butter
  • 1 tsp salt
  • 1 sprig fresh thyme
  • 1 sprig fresh parsley
  • 1 tsp sugar
  • 1 cup water

Method

  1. 1 Boil one chicken until cooked through. Roast the second chicken until golden and cooked through.
  2. 2 Place both chickens in a saucepan with water, butter, salt, thyme, parsley, and sugar. Simmer on low heat until heated through.
  3. 3 Arrange the boiled chicken in a serving dish. Top with peas, then layer the roasted chicken on top. Serve immediately.
