Roast Rabbit With Mustard And Butter
Ingredients
- 1-2 rabbits (back and hind legs)
- Butter (enough for a ½-inch layer)
- French mustard
- Pepper
- Salt
Method
- 1 Place the back and hind legs of the rabbit in an oven.
- 2 Cover the meat with a ½-inch layer of butter, then a layer of French mustard, pepper, and salt.
- 3 Roast by a good fire for one hour, basting often with the meat juices and gravy.
