Roast Pork With Sage Bread Stuffing

Ingredients

  • 1 leg of pork
  • Salt, to taste
  • 6 onions, chopped
  • 12 sage leaves, chopped
  • 1 tbsp butter
  • Pepper, to taste
  • 6 oz bread, soaked in water and squeezed dry
  • 1/2 pint water
  • Peeled potatoes
  • Apples (optional)

Method

  1. 1 Score the pork rind crosswise with a sharp knife and sprinkle generously with salt. Let it season for several hours.
  2. 2 Fry the chopped onions and sage in butter with pepper and salt for 5 minutes. Stir in the soaked bread and cook for another 5 minutes.
  3. 3 Create a pocket in the pork by inserting a knife between the rind and flesh. Fill with the stuffing and secure with a skewer or string.
  4. 4 Place the pork on a trivet in a baking dish with potatoes, apples (optional), water, salt, and pepper.
  5. 5 Roast in a moderate oven (350°F) for about 2 hours.
