Roast Pork With Sage Bread Stuffing
Ingredients
- 1 leg of pork
- Salt, to taste
- 6 onions, chopped
- 12 sage leaves, chopped
- 1 tbsp butter
- Pepper, to taste
- 6 oz bread, soaked in water and squeezed dry
- 1/2 pint water
- Peeled potatoes
- Apples (optional)
Method
- 1 Score the pork rind crosswise with a sharp knife and sprinkle generously with salt. Let it season for several hours.
- 2 Fry the chopped onions and sage in butter with pepper and salt for 5 minutes. Stir in the soaked bread and cook for another 5 minutes.
- 3 Create a pocket in the pork by inserting a knife between the rind and flesh. Fill with the stuffing and secure with a skewer or string.
- 4 Place the pork on a trivet in a baking dish with potatoes, apples (optional), water, salt, and pepper.
- 5 Roast in a moderate oven (350°F) for about 2 hours.
