Roast Leg of Lamb With Mint Sauce
Ingredients
- 1 leg of lamb or mutton
- flour
- salt
- pepper
- water
- bacon or ham fat
- mint sauce (optional)
Method
- 1 Remove caul, pink skin, and superfluous fat from the leg.
- 2 Dredge the leg with flour, salt, and pepper.
- 3 Place in a roasting pan with water and a small amount of bacon or ham fat.
- 4 Roast in a hot oven (425°F) for 15 minutes.
- 5 Lower temperature and bake for 2 hours, basting frequently.
- 6 Serve hot with mint sauce, currant jelly, or spiced fruit.
