Roast Leg of Lamb With Mint Sauce

Ingredients

  • 1 leg of lamb or mutton
  • flour
  • salt
  • pepper
  • water
  • bacon or ham fat
  • mint sauce (optional)

Method

  1. 1 Remove caul, pink skin, and superfluous fat from the leg.
  2. 2 Dredge the leg with flour, salt, and pepper.
  3. 3 Place in a roasting pan with water and a small amount of bacon or ham fat.
  4. 4 Roast in a hot oven (425°F) for 15 minutes.
  5. 5 Lower temperature and bake for 2 hours, basting frequently.
  6. 6 Serve hot with mint sauce, currant jelly, or spiced fruit.
