Roast Goose With Sour Apple Sauce

Ingredients

  • 1 whole goose, cleaned and prepared
  • 1 handful salt
  • 4 sour apples, sliced
  • 1 cup beer
  • Sugar to taste
  • Butter, beaten
  • Barberries (optional)
  • Goose gravy
  • Vinegar
  • Grated bread
  • Ground cinnamon
  • Mustard
  • Boiled onions, strained

Method

  1. 1 Place salt inside the goose cavity. Roast the goose until cooked through.
  2. 2 For the sauce, boil sliced sour apples in beer until mashed. Stir in sugar and beaten butter. Add barberries and goose gravy if desired.
  3. 3 Alternative sauce: Roast apples until soft, then strain. Mix with vinegar, sugar, gravy, barberries, grated bread, cinnamon, mustard, and strained boiled onions.
