Roast Goose With Sour Apple Sauce
Ingredients
- 1 whole goose, cleaned and prepared
- 1 handful salt
- 4 sour apples, sliced
- 1 cup beer
- Sugar to taste
- Butter, beaten
- Barberries (optional)
- Goose gravy
- Vinegar
- Grated bread
- Ground cinnamon
- Mustard
- Boiled onions, strained
Method
- 1 Place salt inside the goose cavity. Roast the goose until cooked through.
- 2 For the sauce, boil sliced sour apples in beer until mashed. Stir in sugar and beaten butter. Add barberries and goose gravy if desired.
- 3 Alternative sauce: Roast apples until soft, then strain. Mix with vinegar, sugar, gravy, barberries, grated bread, cinnamon, mustard, and strained boiled onions.
