Roast Goose With Sage Stuffing And Giblet Gravy
Ingredients
- 1 goose (common size)
- bread crumbs
- butter
- salt
- black pepper
- dried sage
- dried thyme
- onions
- goose giblets
Method
- 1 Prepare stuffing by combining bread, butter, salt, pepper, sage, thyme, and onions. Use minimal butter as geese are naturally fatty.
- 2 Wash the goose in salt water, wipe dry, and rub the inside cavity with salt and pepper. Stuff the cavity with the prepared mixture.
- 3 Roast the goose for approximately one hour (or less for a smaller bird). Pour off excess fat during cooking to prevent rich gravy.
- 4 Prepare hash gravy using the goose giblets, following standard turkey giblet gravy methods.
